Star anise is the fruit of perennial woody plant of Illicium verum. This spice is harvested twice a year; once in Autumn and once in Spring. It grows in humus rich, mildly acidic to neutral soil. The Autumn harvest gives more fruits which are hand-picked and then dried at 30-40°C. This process changes the color of the spice to dark red brown forming star-shapes and exposing the shiny yellow brown seeds.

The dried fruit contains around 12% volatile oil which imparts the spice its sweet, intensely spicy aroma with deep balsamic-woody undertone. The taste is similar to liquorice but slightly more bitter with herbal notes.
